My favorite cut-out cookie recipe!

It is February!  I love baking with the kids, although it is sometimes messy, everyone always has fun!  This is my favorite cut-out cookie recipe, it has evolved over time and trial of different recipes.  They are NO CHILL (who has time for that), so soft, and delicious!  We used heart cookie cutters to be festive for Valentine’s Day, but I use this same recipe for Christmas or any holiday cut-outs.  I also just use one mixing bowl and one cookie sheet, less dishes = happy mama!

Ingredients:

1 cup unsalted butter/margarine

1 cup granulated sugar

1 tsp vanilla extract

1/2 tsp almond extract

1 egg

2 tsp of baking powder

1/2 tsp salt

3 cups of all purpose flour

 

Directions:

1. Preheat the oven to 350°

2. In bowl or mixer, cream butter and sugar until smooth

3. mix in the extracts and egg

4. add baking powder, salt and then flour (mixing in between each).  I add the flour a cup at a time, mixing after each

5. once mixed fully, I take out and knead a few times on a floured surface

6. divide into two balls, roll out, then start to cut out

7. place cookies on an un-greased cookie sheet

8. bake 6-8 min at 350° (time may vary depending on cookie thickness and your oven)

9. remove from oven, cool cookies on parchment paper or cooling rack

10. decorate

I like to lay parchment paper out for the kids, give them a ball to roll out, and let them have at it!  They love it, just be sure to watch them in regards to eating the dough as there is one raw egg in it!

 

 

 

For frosting, I mix confectionery sugar with a plant based milk (I like it runny).  To make it easy I pour a little on each cookie for the kids to decorate.  They like to spread it out and pick all of their own sprinkles!  When I decorate I actually dip the cookie face down into the runny frosting this makes for a perfectly even, quick frost!
